leftover soda bread, rocket and mozzarella with oil, baby tomatoes //


soda bread

450 g bread flour, plus extra for dusting
2 tbsp baking soda
1 tsp salt
25 g soft butter, diced
300ml buttermilk

preheat the oven to 200c/400f, lightly flour baking sheet and set aside. sift the flour, baking soda and salt together into a large bowl, then lightly rub in the butter. gradually add in the buttermilk, mixing slowly with a nice wooden spoon to form a soft dough. turn the dough onto a lightly floured surface and knead gently for a few minutes. shape the dough into a large flat round and place on the baking sheet. using a sharp knife cut a deep cross in the top of the dough, and sprinkle over a tiny bits of flour. bake the loaf for 30-40 minutes, or until risen and nicely browned. the bread should sound hollow when tapped underneath, and look delicious and rustic. transfer to a wire rack to cool, and then tear off a corner and slather with butter.

one of the easier quick breads to make. i quite like it with soups, marmalade or lemon curd, or even clotted cream. just sayin'
