mint and pea crostini

two cups fresh green peas
handful of fresh mint
one tiny garlic clove
salt+pepper
extra virgin olive oil
lemon juice

boil peas, plunge into cold water bathe. crush/chop/blend mint and garlic, and peas. a few glugs of oil, salt and pepper and lemon, to taste. smear on crusty bread, maybe a few mint leaves to top.

with two mint plants near death in the kitchen, i was inspired to harvest.
the green colour, so springy and the flavour so crisp and sweet.
+ wine and cheese board, perfect.
